In the War on Socks & Undeeees, I’ve won a battle

I have a new system to deal with the millions, no billions of lost socks and little undies we have here at The Circus. Each kid now has a delicates bag with a ribbon of their choice attached to hang off their bedroom door knobs. They all put their undies and socks in their bags throughout the week and then I just collect their bags, throw them in the washing machine and then the dryer. Done!

And yes, I do use the dryer for socks and undies… Once upon a time when there was only one little bottom’s worth of undies, I actually enjoyed hanging them out on the line, it was cute! But I now find its super time consuming to hang out all the three kids smalls.

Slow Cooked Chicken & Sweet Potato Casserole

You all know I love my slow cooker… I hadn’t tried anything new in it lately and I’m sure it was feeling a little neglected…
Enter the unusually cold Brisbane weather we are experiencing at the moment (who knew it could actually feel like winter in QLD?!) and my foodie thoughts automatically turned to long cooked, heart warming dinners!

With two chicken breasts already thawed, and wanting to slow cook I went a Googling (as you do) and came across a recipe from Kidspot for Chicken and Pumpkin Casserole. Except, as usual, I put my own spin on things and this is what it turned into…

Chicken and Sweet Potato Casserole

Ingredients
2 chicken breasts cut into large pieces
2 tbl spoons plain flour
3 cups of sweet potato cut in 3cm pieces
3 carrots cut into large sections
1 garlic clove finely chopped (or minced out of a jar is good too)
Hebs of your choice (I used my favourite Gourmet Garden Mediterranean combo)
1/4 cup apple cider vinegar
500ml chicken stock

Method
(this is very much the same as the Kidspot recipe)
Toss the chicken with flour in a ziplock bag.
In a frypan, heat the olive oil and brown the chicken.
Add the crushed garlic and cook for a minute.
Add the herbs and apple cider vingear, using it to deglaze the pan.
Put all frypan contents in your slow cooker.
Add the carrots, pumpkin and stock.
Cook on High for 4 hours.
Serves with steamed greens.

Notes
I didn’t have any celery or onion, but you can add this to the casserole as well…
Serve it with rice to soak up all the juices.. Yummm!

Pizza Scrolls

Today, the Clowns and I made pizza scrolls for their lunch… Super, super easy and something a bit nicer than their standard sandwich!

Ingredients
Puff pastry sheets
Pizza sauce
Ham
Pineapple
Feta
Semi dried tomatoes
Capsicum
Mushrooms
Grated cheese

Method
Preheat moderate oven.
Score each if the pastry sheets 1.5cm along one edge without cutting it all the way through (this acts as a topping guideline).
Spread the pizza sauce over the pastry sheet, but not in the 1.5cm section.
Sprinkle whatever toppings you’d like (we just used a few of your normal pizza toppings) then throw on a bit of grated cheese.
Roll up your pastry sheet starting from the side opposite the 1.5cm section. You’ll see now that the topping moves as you roll it up and the topping-less section folds last and helps hold everything in place.
Cut 0.5cm off each end of the roll and then slice the pastry roll into 1 – 1.5cm sections.
Place on a lined baking tray, leaving a little room between the scrolls for the pastry to work it’s magic and puff up all golden brown in the oven. This should be about 20 minutes or near to, but you can smell when they are ready!

My Sweet Addiction

Hi, my name is Meegan and I am a sugar addict.
I believe most of the population is, to some extent.
I feel like I am in the 200th percentile of the sugar addiction scale.

I’m what’s know as a chocoholic.

I love to cook with it.  Eat it.  Share it.
I look for it.
I look forward to it.
I rely on it.

I need to change that.  I don’t want to be tied to my sugar addiction any longer.
(I can literally hear my family and close friends laughing their heads off – Meegan?  Meegan Harvey willingly give up chocolate???!!!  Seriously?!)

So I researched.
I asked.
I read.
And read some more.

I can’t remember the last time I willingly read a non-fiction book that had me Googling terms and actually thinking long and hard about something other than the usual Circus stuff that fills 99.99% of my thoughts.  One particular book made a big impact on the way I think about something.  The way I feel about something.  The way I behave about something.

Enter, Sweet Poison by David Gillespie.

David has written, in layman’s terms with a bit of humour added in, about sugar and how the body responds to the amount and the types of sugars we consume.   He has successfully made what is a pretty messy and complicated jargon filled minefield, a relatively easy read.  If you are even vaguely interested in how much sugar is ‘hidden’ in the foods we buy or how much sugar we are unknowingly consuming, but this book!

So…

Today is June 8th – I have been chocolate, soft drink and almost completely sugar free for five days now.  It hasn’t been a walk in the park, but it hasn’t been as hard as I had prepared myself for either…

I have slipped up only once, and it was completely out of habit or routine of ordering at a favourite afternoon tea place.  I had actually ordered before I stopped myself!

But other than my small hiccup, it has been OK.  I had a huge headache on day four but a couple of Panadol fixed that up quickly.

I am hoping that after a couple of weeks, I will be feeling less fuzzy, clear headed, more able to focus and be less scatterbrained.  Basically I want the sugar ‘cloud’ to be lifted.

I think I am sleeping better.
I think I have more energy at that awful 2-3pm sugar searching time.
I am not searching the pantry or fridge for any chocolate I have hidden and forgotten about.
I have even declined chocolate.

I class all these things as small successes!

I have high hopes.

I am helping myself too – shopping mainly from the outside of Woolies or Coles means buying fresh and less processed foods, not only for me, but for the rest of the Circus as well.  And Marc has been awesome.  While he wasn’t too fussed on changing his ways too much, he has begun to eat even better than before, mainly with less bad snacking and better drink choices.

We are on our way to a healthier version of the Circus and I’m excited about it :)

Nutella Buttercream Icing

Last night I cheated and made a Green’s chocolate cake…
I made it a little bit special by dolloping Nutella throughout the batter…

Then once it was cooked I decided that plain old normal butter icing wasn’t going to cut it.
So out came the Nutella again, and I made Nutella buttercream icing!
It was so good, even if I do say so myself.
Nutella always makes things better.
Always.

The only problem with me sharing this recipe is that I didn’t measure my ingredients. I almost always ‘wing it’ when making butter icing.. But I do have an old basic recipe that I used to use…

Buttercream Icing

Ingredients

  • 185g Butter
  • 2 1/4 Icing Sugar
  • 2 tblsp Milk
  • 1/2 – 1 tsp Vanilla Bean Paste

Method

  • Cream the butter with a little of the icing sugar.
  • Gradually add the rest of the icing sugar at a medium speed.
  • Add the vanilla and the milk.
  • If you want a runnier/creamier consistency, slowly add more milk.
  • If you accidentally add too much milk and your icing is too runny, just add a bit more icing sugar until it’s at your preferred consistency.

So that is my usual {and favourite} cake and patty cake topping.

To make it into Nutella butterceam icing these are the small changes I made -

  • Add 2 tblsp Nutella to the butter and cream them together with a little of the icing sugar.
    {You can add more Nutella if you like, but this was enough to give it colour and enough flavour without being too overpowering}
  • With the icing sugar, add a pinch of salt.

The Nutella gives the icing an even smoother and creamier consistency than just plain buttercream icing…
It’s almost velvet-like…
Delicious…!!

Hanging out on the SS Warner

The SS Warner park is close enough for me to grab a coffee after dropping Owen at school and let the littlest Clowns burn off some energy before heading home for morning tea.

We get there before the crowd, usually having the entire park to ourselves. We check out the ducks and try to spot a turtle or two, have a swing and a climb, sometimes even a rolling race down the grassy slope!

It’s so tough living minutes away from such great parks that my Clowns love to explore!

And then thankfully Ella had woken up and was able to be the girl…!
